Creamy Crock Pot Chicken and Broccoli over Rice

Do you ever feel like your fridge, freezer and pantry get stocked up with just...stuff? Yet you still go grocery shopping for a newly prepped dinner menu? At some point every month I'm like really...we already have stuff I can make dinners out of! So, this week has been our "get rid of what we already have" week as far as food goes.

Which brings me to this yummy, cozy, comforting, fall appropriate, easy crock pot meal from the Picky Palate! Both of my kids absolutely loved it and ate every bite.

What you will need:

  • 3-4 chicken breasts
  • 1 can cream of chicken soup 1 can cheddar soup
  • 14 oz. (or 1 can) of chicken broth
  • 1/2 tsp. salt
  • 1/4 tsp. cajun seasoning
  • 1/4 tsp. garlic salt
  • 1 C sour cream
  • 1 crown broccoli, steamed
  • Shredded cheese

  • Mix cream of chicken, cheddar soup, chicken broth and seasonings into a bowl until blended well
  • Place chicken breasts into crock pot
  • Pour soup mix over the chicken breasts
  • Cook on low for 6 hours
  • Remove chicken and shred
  • Steam broccoli
  • Add sour cream into soup mix and mix until blended
  • Add shredded chicken and broccoli back into crock pot and serve when ready over rice with a sprinkle of shredded cheese
