Caramel Popcorn Balls

I like my popcorn balls extra caramel-ee, so I didn't use the full 2 1/2 C of unpopped popcorn and instead used about 1 C and still ended up with around 20 popcorn balls.

What you will need:
  • 1/2 C unpopped popcorn (makes about 12 popcorn balls, which is more than I even need.)
  • 1/4 C butter
  • 1 C packed light brown sugar
  • 1/2 C light corn syrup
  • 2/3 C sweetened condensed milk
  • 1/2 tsp. vanilla extract
  • Pop your popcorn
  • In a medium sauce pan, combine butter, brown sugar and corn syrup
  • Bring to a boil and add condensed milk
  • Simmer, stirring constantly until caramel reaches 238 degrees
  • Add in vanilla
  • Pour over popcorn and shape them into balls
