Sun Dried Tomato Dip



What you will need:
  • 2 (8 oz. packages) cream cheese, softened
  • 2 C mayonnaise
  • 1/4 C finely chopped onion
  • 4 cloves garlic, minced
  • 1 jar (7oz.) oil packed sun dried tomatoes, drained and chopped
  • 2/3 C roasted sweet red peppers, chopped
  • 2 C shredded part-skim Mozzarella cheese
  • 2 C shredded Italian Cheese blend
  • 1 C shredded Parmesan cheese, divided
Directions:
  • Preheat oven to 350 Degrees
  • Grease a 13x9 baking dish
  • In a large bowl, combine cream cheese, mayonnaise, onion, garlic, sun dried tomatoes, red peppers, Mozzarella cheese, Italian cheese and 3/4 C of the Parmesan cheese
  • Pour mixture into 13x9 and spread evenly
  • Bake uncovered for 22 minutes or until edges are bubbly and lightly browned
I lightly toasted some baguette bread slices to spread the dip onto. You can use different bread slices or crackers.
