What you will need:
- 1/2 C. butter softened
- 1 C. granulated sugar
- 1/2 tsp. vanilla extract
- 1 egg
- 1 tsp. lemon zest
- 1 T fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 C. flour
- 1/2 C. powdered sugar
- Preheat oven to 350 degrees
- Spray your cookie sheet with non-stick spray, or use a dark non-stick cookie sheet
- In large bowl, mix together butter and sugar
- Add in vanilla, egg and lemon zest and mix together
- Add in fresh lemon juice and mix together
- Add in the dry ingredients and mix all together until creamy and smooth
- Roll a heaping teaspoon of dough into a ball (I made them more like tablespoon size) and roll around in the powdered sugar, coating the ball
- Place onto cookie sheet and bake 9-11 minutes (if you are using a non-stick cookie sheet decrease baking time by about 2 minutes) or until sides just start to brown and the tops of the cookies have lost their shine
- Remove from oven and let cool 3 minutes before transferring them to a cooling rack
