Took this to a church thing this afternoon and had never made it before. If you like vegetables, you will like this. If not, opt out.
What you need:
- 1 bag Frito chips
- 1 can pinto beans, drained
- 1 can kidney beans, drained
- 1 tomato, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 red onion, diced
- 1 C Catalina dressing (more or less to taste)
- 1 C lettuce, chopped
- 4 stalks celery sliced down the middle, then diced
- 1 C grated cheese
- 1 can sliced olives (omitted in this picture)
- Dice/chop up your vegetables
- Drain the beans/olives
- Grate your cheese
- Toss all ingredients together in large bowl
